THE PHILOSOPHY
Why the Butterfly?
Everyday Choices
From vine to glass
Our winery is distinctive for using only estate-grown grapes, ensuring strict control over every stage of the process in line with organic farming principles. We produce about 25,000 bottles annually, focusing on quality rather than quantity.
Modern equipment, including temperature-controlled stainless steel fermenters, allows for natural clarifications and stabilizations without additives, minimizing oxidation and the use of sulfites.
We combine both traditional and innovative aging methods, using barrels, tonneaux, barriques, and amphoras for our dry Moscato, creating unique wines that reflect a strong bond with the land and its winemaking tradition.
I chose organic in order to respect nature and enhance my territory. Every bottle I produce embodies authenticity and passion, a pure expression of a land I love and strive to protect every day.
Where It All Began
Our Winemaking Roots to Today’s Family
Since I was a child, watching my grandfather tend the vines with passion, I’ve felt a deep connection to the land. Years later, I left my career as a lawyer to pursue a dream: to create a wine project that would honor family traditions while looking to the future. With my family’s support, I chose to produce organic wines because I believe every choice we make today must consider the generations to come.
Every bottle I produce encapsulates this vision: a tribute to the past and a commitment to a more sustainable tomorrow.
Vineyards and Territory
In the Areas Best Suited for Winemaking
My vineyards are located between the Langhe and Monferrato, UNESCO World Heritage sites and ideal terroirs for the grape varieties I produce. The process fully respects the tradition and quality typical of our splendid territory.
