Winemaking Process
Manual harvest of the grapes in 20 kg ventilated crates. Destemming and gentle crushing of the bunches. Fermentation takes place in stainless steel tanks at a controlled temperature of 26°C. Malolactic fermentation is completed, with maceration lasting approximately 15 days, accompanied by daily pump-overs and punch-downs.
Aging: In large French oak barrels
Bottle Aging: 8 months
Serving Temperature: 18°C

Degustazione

Il Langhe Nebbiolo si presenta con un colore rosso carminio di media intensità e il profumo è intenso, complesso e fine.
Tra i sentori di rosa e violetta e quelli di frutta, come lampone e fragolina di bosco, emerge una spezia dolce come la noce moscata e il pepe verde.
All’assaggio è fresco, pieno, con un tannino moderato, caratteristico del vitigno, e un finale delicatamente persistente con richiami retro-olfattivi fruttati.

L’abbinamento gastronomico esalta le ricette più complesse e della grande cucina regionale: ravioli di carne al sugo d’arrosto, brasato o uovo pochè con fonduta con tartufo.
